Ice Scramble or what I often pronounce as Iskrambol is what completes my childhood. I can still remember it costing 3 PHP way back. I saw this earlier and it sure made me feel nostalgic.
Ice Scramble
The exact origin of ice scramble is a mystery. Some say it originated in Iloilo but whichever region it came from doesn’t matter to me. I simply love the taste. It is the Pinoy version of snow cone and slushy. The classic iskrambol as we know it was made from shaved ice drizzled with milk powder and chocolate syrup.
Here’s a quick easy recipe you can do at home to enjoy Ice Scramble
INGREDIENTS
- 3-4 cups shaved ice
- 1-2 tbsp sugar
- 1 cup Evaporated milk
- 1/2 tsp banana extract/flavoring
- 6-8 drops of red food color for the pinkish color
- Optional Toppings:
- powdered milk chocolate syrup
- strawberry syrup
- mini marshmallows
- candy sprinkles
- rice crispies
INSTRUCTIONS
- Mix evaporated milk, banana extract, red food color, and sugar in a bowl.
- Add in shaved ice and mix thoroughly. You may also use a blender.
- Place in serving glasses or cups.
- Top it with optional toppings.

Flavor Idea
Ice scramble flavors have evolved over the years. No rule says you can only stick with the color red version of ice scramble. In 2010, food franchises started to reinvent Pinoy scramble by adding more colorful toppings. I would highly suggest you go beside the norm. I tried making ube and chocolate-flavored ice scramble. Aside from the flavor, you can also add milk tea pearls to it.
